Knights and Kaiden Sellswords are more difficult to defeat whilst they are mounted, so killing their Horse can make the battle easier. There are 6 different types of Horses. The Mausoleum Knight's Horse is headless, like the Mausoleum Knight itself. It's possible to kill the rider without killing the Horse, unlike the horse ridden by Starscourge Radahn, or the (presumably) undead horses that the Night's Cavalry and some Wraith Callers ride. The last of which is actually part of the same entity as the Wraith Caller, unlike the other two, which is why it can not be separated from its rider.
