The Troll is extremely weak to Sleep.
A single Sleep Pot will put it to sleep no matter how low your Arcane or how many times it's already slept.
Melee Strategy
The Troll has high Hardness, so most one-handed melee attacks will rebound off it preventing you from landing chain attacks.
You can prevent this by two-handing your weapon or using a weapon with higher Hardness.
Also, beware of its large area-of-effect attacks and give yourself plenty of time to move out of the way or roll through them.
Otherwise, the safest place to be is near his feet, and ideally behind him as well.
You can still get hit by his Stomp, but follow-up moves will mostly miss you.
Stance Breaking: Since the troll has very low Stance, it doesn't take many fully-charged heavy attacks or jump attacks to get it to collapse onto the floor.
Land a critical hit if you want, or just land more blows until it gets back up.
Magic and Ranged Strategy
The Troll is slow but hits with large area-of-affect attacks, so make sure you aren't caught in them.
It's best to use a shield in one hand and your staff or seal in the other, in case you need to guard in an emergency.
Bait his attacks, then roll away to create separation before casting.

Slams its hammer down headfirst directly into the ground in front of it, creating a shockwave

Kneeling Swing
Kneels on the ground and braces itself with its hand and swings its hammer in a wide counterclockwise arc with extra reach

Mega Slam
Grabs its hammer with both hands and holds it above its head higher and longer than for a normal vertical swing, then slams it into the ground releasing a huge shockwave
The safest strategy is to run away, but you can also get in a hit while it's winding up and then jump over the shockwave
Overhead Combo
Lets out a furious growl and slams its hammer into the ground in front of it four times.
Next, raises its left leg for a few seconds before doing one more colossal hammer slam.
Finally, pulls its hammer out of the ground with a shockwave.
Only does this below 60 HP
This attack is strong, but it doesn't have very good tracking.
Stay near its legs and you'll be fine except for the final slam, which has a wide enough shockwave that you should try to roll it if you're anywhere nearby

Roars, creating a large shockwave and increasing the Troll's damage by 20 for 15 seconds
